1 c. chopped walnuts
1 c. unbleached white flour
1/2 c. lecithin granules
1 Tbsp. Ener-G baking powder
1 1/2 tsp. sea salt
1 tsp. coriander
3/4 c. turbinado sugar
2 c. water
1 Tbsp. vanilla
additional chopped walnuts for the tops
Mix dry ingredients together. Stir in water and vanilla. Scoop into oiled muffin tins, top with walnuts, and bake at
350 degrees for about 35 minutes.
